This is a really quick and easy recipe for Balsamic Tomato Spaghetti - perfect for when caravanning!
4 Garlic Cloves, crushed
500g Cherry Tomatoes
2 Tablespoons Balsamic Vinegar
1 Teaspoon Sugar
1 Teaspoon Dried Oregano
2 Handfuls Rocket
3 Tablespoons Parmesan Cheese, grated
How to Cook:
Cook all the spaghetti in boiling water for 8 - 10 minutes.
While the spaghetti is cooking, heat some olive oil in a saucepan over a high heat.
Add the garlic and cook for 1 minute.
Add the cherry tomatoes, balsamic vinegar and sugar.
Shake the pan around to mix and cook for 4 - 5 minutes.
Sprinkle over dried oregano and stir.
Add the cooked pasta to the pan with the rocket and the parmesan.
Toss them all around to combine all the ingredients.
Eat and enjoy!!
