This is a really quick and tasty recipe for Caravan Kedgeree - a great meal to cook up when caravanning!
Preparation Time: 5 minutes
Cooking Time: 30 minutes
Ingredients: (serves 2)
200g smoked haddock fillet
1 onion (finely chopped)
1 tblspn parsley (chopped)
2 cups American long grain rice
1 tsp curry powder
How to Cook:
Hard boil 2 eggs then allow to cool with shells on.
Put haddock in a saucepan, cover with 1 pint water and cook for 10 minutes.
Drain, but keep the liquid.
Melt 30g butter, add the curry powder and cook for 2 minutes.
Then add the onion and cook until soft.
Add the rice and the fish liquid and cook until the rice is soft.
Flake the fish and fold in to the rice with 20g butter.
Serve with the shelled and quartered eggs on the top and scatter with the parsley.
