Chicken Mayo Salad

This is an extremely quick but very tasty recipe for Chicken Mayo Salad. It is perfect for on holiday as it only takes a minute or two to prepare!!


1 Ready Cooked Barbeque Chicken
2 Celery Stalks, sliced
70g Black Olives, halved and pitted
1 handful Flat-leaved Parsley, chopped
2 Hard-boiled Eggs, roughly chopped
250g Mayonnaise

How to Cook:

Shred the meat and skin of the barbecued chicken and put in a bowl with the two sliced celery stalks, olives, parsley, chopped eggs and mayonnaise.

Toss to evenly combine the ingredients - it's as easy as that!!

Serve with some fresh Italian bread.
