Satay Chicken

Here's one of our favourite recipes, Satay Chicken!!  Everyone stays for dinner when we make this!!

Preparation Time: 5 minutes
Cooking Time: 25 minutes

Ingredients: (serves 2)

2 chicken breasts (cubed)
2 tblspns crunchy peanut butter
2 tblspn sweet chilli sauce
1 onion (sliced)
Olive oil
1/2 mug couscous
2 wooden skewers

How to Cook:

Fry the onion in oil until soft. Add the chicken and fry until sealed.

Remove the pan from the heat.

Mix together the peanut butter and chilli sauce in a bowl.

Push the chicken onto the wooden skewers, coat with the sauce and then grill for 10 minutes, turning frequently.

While the chicken is cooking, put the couscous into a pan and pour over a pint of boiling water.

Cover and cook for 2 minutes then stir and add more water if needed and replace the lid.

Mix the onion with the couscous and serve with the chicken on the top.
